Sweet and Spicy Potato Oven Fries
Great tasting and Healthy alternative to fries.
Ingredients
1 large sweet potato
Cooking spray
1 teaspoons sugar
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/8 teaspoon black pepper
Directions
-preheat oven 500 degrees
-peel and chop potato into medium sized wedges.
-Add to a medium bowl with the potato wedges the next 5 ingredients (cooking spray, sugar, salt, ground red pepper, black pepper). Toss well to coat.
-Arrange potatoes on baking sheet in one single layer. place in the oven for 10 mins. turn potatoes on opposite side and bake for another 10 minutes or until tender and browned.
30 minutes to prepare and cook.
Makes 2 Servings.








Tuna & Spicy Pineapple Salsa
Ingredients
1/4 medium fresh pineapple, peeled and cut into 1/2 inch slices
1/2 scallion (spring onion), diced
2 Tbsp celery
1 jalapeno pepper
1 tbsp cilantro
2 tuna steaks 3 oz each
1 tsp olive oil
salt, pepper, lemon juice
Directions
1. Grill pineapple slices & celery , uncovered, over medium heat for 5-7 minutes on each side. Chill for 30 minutes.
2. Dice the pineapple; place in a bowl. Stir in the onion, jalapenos,celery, cilantro and lime juice. Refrigerate for 1 hour or until chilled.
3. Brush tuna steaks with oil; sprinkle with salt and pepper. Grill, covered, over medium heat for 2 minutes on each side or until fish flakes easily with a fork. Serve with pineapple salsa.

Berry Dessert
Satisfy your sweet tooth with this great dessert!
Ingredients:
1/4 C Sugar Free Pudding (Vanilla or white chocolate), prepared according to directions on box with skim milk
1 Tbs Cool Whip Free
1/4 C Frozen Berry Mix (thawed)
Directions:
In a small dessert bowl, mix together pudding and cool whip. Top with berries.
Makes 1 serving.
